Come home from Thanksgiving dinner with a mountain of Tupperware bowls filled with leftovers and you need some fresh tips on using them up? Here are some ideas to help you get through the post-thanksgiving food flood.
Turkey Quesadilla
Leftover turkey breast not watering the mouth? Chop it up and throw it in a quesadilla. Take a flour tortilla, apply butter to one side, add the turkey, sprinkle in a cheese of your choice and fry it in a skillet. For added flavor, heat up some cranberry sauce and dip it in as desired.
Cranberry Pancakes
If you want breakfast with a holiday twist, make cranberry pancakes. Mix up some pancake batter and plop some cranberries in. Cook the pancakes as usual and use the sauce in place of syrup.
Potato Cakes
Mashed potatoes can easily be made into potato cakes by simply adding milk, eggs and flour. When the potato mixture is ready, form the batter into patties and fry them in a little bit of oil until brown. If you want to add some protein, throw some turkey chunks into the mix and top with some cranberry sauce to make a meal out of it.
Turkey Pasta
You can always use the leftover turkey like you would chicken in pasta. Add it to fettucine alfredo or use it for turkey parmesan. If the cupboard is really lean, you could always add it to Ramen and make a cheap version of turkey noodle soup.
Sandwiches Galore
If none of these options pique your interest, then there’s always the trusty turkey sandwich. Go classic with turkey, mayo, mustard and a slice of American cheese, or go Italian and try to make a Panini. Make a grilled cheese and put any leftovers you want on there. Sandwiches can be whatever you make them, so get creative!
