4 recipes for Memorial Day weekend

You can practically hear the backyard grills being cleaned up and turned on in preparation for Memorial Day and all of the cookouts that will occur. Haven’t put any thought into what you’re going to bring to your annual get-together? No worries, here are some recipe ideas to keep your behind from getting barbecued.

Barbecue Onion Steaks

If you are looking to strike that perfect balance of unique, yet appealing, try these Barbecue Onion Steaks. What’s that you tell me? Onions can be steaks? That’s right. These aren’t meant to be a topping by any means. These onions are basted with honey mustard and grilled until charred and caramelized. Not a fan of honey mustard? Then maybe this grilled blooming onion will be of interest to you.

Buffalo Chicken Dip

Freakin’ classic. It’s the standard for every informal shindig. Sure, Super Bowl parties might be home to this dip, but that doesn’t mean people won’t be happy to see it. Everyone has their own way of making it, so here is the recipe my family uses. I really have no idea where this recipe came from, but it was introduced to me through my brother-in-law Matt.

Ingredients

  • 5 boneless, skinless chicken breasts
  • 12 oz Frank's RedHot hot sauce
  • 2 8oz packages of cream cheese
  • 1 jar of Marzetti’s The Ultimate Blue Cheese dressing
  • 12 oz of shredded cheddar cheese
Instructions

Boil the chicken breasts for 15 minutes. Shred them, then combine the chicken with the hot sauce. In a separate sauce pan, melt the cream cheese and blue cheese dressing over medium heat until smooth.

Layer chicken and hot sauce in a baking dish, then pour the cream cheese and dressing mixture over the chicken.

Bake at 350 degrees for 20 minutes, then remove from the oven. Sprinkle shredded cheddar cheese on top, then bake for another 10 minutes.

Enjoy with tortilla chips or as a topping for hot dogs or burgers.

Pineapple Bacon Baked Beans

Another classic, but this time with a twist. Bacon and beans are the norm, but if you mix it up with a little pineapple, it’s suddenly more appealing than your standard baked beans. Red onions, tomatoes, bacon and great northern white beans makes this dish a good dish to try out on your family.

Smoked Ice Cream

There’s always that one person at the party that tries to show everyone up with weird and exotic dishes. If you bring Smoked Ice Cream to the party, then you can create a reputation for yourself. You can use a ready-made ice cream like the recipe above suggests, or you can learn how to make your own smoked cream to use for homemade ice cream.
